Chocolate Mud Cake

Here's a most wonderful, guilt-free chocolate cake recipe.  I Believe it's a gift from Heaven for those on a gluten-free or low-carbohydrate diet.  In fact I just had to be sure it was as wonderful as I remembered and made one today just to check.  Yep!  It is.

CHOCOLATE MUD CAKE

Ingredients
6 egg whites
2 egg yolks
2 1/2 teaspoons gluten-free baking powder
100 g almond meal or LSA

50g coconut meal (fine-ground desiccated coconut)
2 teaspoons Stevia liquid (sugar substitute - buy in health stores)

or 2 tablespoons Bettasweet (sugar substitute available in

supermarkets) or 2 tablespoons honey
A pinch of sea salt
2 tablespoons of cocoa powder
A pinch of cinnamon
1/2 cup of boiling water
50g melted butter
1 teaspoon of natural vanilla essence

 

Method
Preheat oven to 180°C.

Separate egg whites, add salt and beat until stiff.

Combine baking powder, almond and coconut meal, stevia (or other sweetening),  cocoa & cinnamon in a large bowl.

Make a well in the centre, add yolks, butter, vanilla and boiling water.  

Beat until smooth.

Fold this mixture into the stiffly beaten whites.

Pour into greased and lined 21 cm X 21 cm cake tin and bake at 180°C for 40 minutes. Let cool before serving.

 

Can be served alone, with cream or ice cream, or sliced with butter, nut butter and/or honey.

Sounds yummy.  Do you have a recipe for protein cookies?

Bevin, I reckon you could use this same recipe for protein cookies except you'd need to add say 50g more of LSA or coconut meal to make it less 'muddy' or runny.  Then instead of putting the mix into a cake tin, dollop it onto a cookie tray with a baking paper lining.  Cooking time would be reduced to about 15 minutes at 180 deg C. 

If you're not too worried about the extra carbs try adding a handful of organic choc chips and make "Double Chocolate Protein Cookies". 

Would you like to try this out for me and report back?  In fact I insist you invite me over for morning tea/coffee when you make them!
