Today I've got a recipe for items that can constitute snacks for the lunch box or hors d'heuvres at a formal do. They are savoury, very tasty and make up for the feeling that one is missing out because one is on a restricted diet. Yay for Mini Pizzas!
It's perhaps appropriate that I answer a query raised by Healer: How come I seem so anti grains and carbs. The brief answer is that many people, maybe as many as 80% of westerners, have a digestive system damaged by various external influences, not least of which would seem to be childhood vaccines, antibiotics and general anaesthetics. This damage appears to manifest in a range of symptoms from allergies and sensitivities to digestive disruptions, dysbiosis and candidiasis. The best recovery plan I have found for such victims involves developing an individual diet based on reducing grains and carbohydrates. It has never failed to get desirable results in anyone who has taken it on. More on this later.
Mini Pizzas
1 egg
1 tablespoon water or milk
pinch sea salt
100g finely ground cashew nuts
grated cheese
tomato, sliced
Break egg into bowl and add milk and sea salt.
Add sufficient ground cashew to make a thick batter consistency.
Prepare frying pan on warm heat with melted butter, ghee or coconut oil.
Make 4 - 8 dollops of batter in the pan (size to suit).
Fry thin patties both sides at low temperature.
Remove from pan and place on lined baking sheet.
Place a slice of tomato on each patty.
Sprinkle with grated cheese.
Grill until cheese melts.
Serve hot or cold.
