1 ½ teaspoons gluten-free baking powder *
1 teasp vanilla essence
1 cup whole figs
1 cup mixed raw nuts
½ cup pumpkin seeds
Juice of 1 orange
LSA as desired (if adding extra dry ingredients add extra fluid)
In a food processor grind together nuts and figs to a sticky paste.
Over low heat combine honey/stevia, vanilla and butter until butter is melted.
Add contents of saucepan and remaining ingredients except pumpkin seeds to food processor.
Blend to create a muffin-like batter. (Add extra fluid or LSA to adjust texture)
Stir in the pumpkin seeds manually.
Spoon moist mixture into greased muffin tins.
Sprinkle top with LSA, nuts, seeds as desired.
Bake in moderate oven 180°C until cooked.
Large muffins take about 30 mins.
* Make your own gluten free baking powder using 2 parts baking soda to 1 part cream of tartar.
