I'd like to introduce a musical term to my recipe book - Variations on a Theme.
Whole symphonies are constructed on this basis and so why not a recipe book?
The theme today is Coconut Patties. For each of the following variations the basic recipe is the same and the additions are what makes them exciting.

Curry Coconut Patties
Add 1 teasp curry powder per egg and stir thoroughly into the pattie mix.
Create up to 6 small, round patties in the frying pan.
Fry both sides in butter or coconut oil on low heat.
Serve hot or cold.
Fish Patties
Add 1 x 95g can of tuna or salmon (flavoured is good) to the pattie mix.
Combine thoroughly.
Shape into 3 - 4 patties in the pan.
Fry both sides in butter or coconut oil on low heat.
Serve hot or cold.
Blueberry Patties
Sweeten the pattie mix with a teaspoon of runny honey stirred in thoroughly.
Add about 21 fresh or frozen blueberries and fold gently into mix.
Form 3 thick patties and cook longer and slower with a lid on the pan.
Serve hot or cold with butter, cream or icecream.
Chocolate Coconut Patties
Sweeten the pattie mix with 2 teaspoons of runny honey.
Add 4 drops of natural vanilla essence and 1 teaspoon of cocoa powder and stir in thoroughly.
Form into 4 patties in the frying pan.
Fry both sides in butter or coconut oil on low heat.
Serve hot or cold.
